This dressing strikes the perfect balance between creamy and refreshing. Homemade yogurt gives it body and gentle tang, while fresh herbs and lemon add brightness and zing. This version is a lighter take on the classic Green Goddess, which traditionally relies on mayonnaise and sour cream. You still get the same luscious texture and bold flavour, with the added bonus of probiotics from homemade yogurt—making it as kind to your gut as it is to your taste buds.

Versatile

Green Goddess is a natural on salads, but it doesn’t stop there. This dressing is wildly versatile and works beautifully in so many other ways. Toss it through pasta, use it as a dipping sauce, drizzle it over grilled meats or vegetables, or even use it as a marinade. Even non-salad lovers will find plenty of reasons to enjoy it.

Go crazy with herbs

One of the best things about Green Goddess dressing is how forgiving it is. Almost any combination of herbs works, so feel free to experiment or tailor the flavours to suit a particular cuisine. There’s really no wrong choice here.

  • Mediterranean: parsley, dill, oregano, basil, thyme and mint
  • Italian: basil, parsley, oregano, rosemary and sage
  • Asian-inspired: Thai basil, coriander, garlic chives, mint and lemongrass
  • Mexican: coriander, parsley, oregano, thyme, jalapeño

Substitutions and optional add-ins

One of the joys of making dressing at home is how easily it can be adapted. These substitutions and add-ins let you tailor the recipe to your taste and dietary needs.

Dairy-free: Swap dairy yogurt for your favourite plant-based yogurt.

Yogurt: The thickness of your yogurt will determine the final texture. We used the whey-rich, looser portion of homemade probiotic yogurt. For a thicker dressing or dip, choose Greek-style yogurt or even dripped yogurt cheese. Note that the dressing will look thin straight after blending but will thicken as it chills.

Dijon mustard: A teaspoon adds depth and subtle complexity.

Anchovies: Add 1–2 for a savoury, salty umami boost.

Grated parmesan: Not traditional, but it adds extra creaminess and a flavour reminiscent of our homemade yogurt Caesar dressing.

Avocado:Add half to a whole avocado for an ultra-creamy finish—perfect for dipping.

Sweetener: A teaspoon or two of maple syrup balances the tang beautifully.

Make it spicy:Add jalapeño for heat; remove the seeds and ribs before blending.


Make ahead and store

One of my favourite things about this dressing is that it actually improves as it sits. The flavours deepen and the texture thickens, making it ideal for meal prep or making ahead. Store it in a jar with a tight-fitting lid, (the Luvele glass vacuum canisters are ideal) in the fridge for up to a week. Separation is normal—just give it a good shake before using.
