Place the rest of the ingredients into the blender jug and blend on 'smoothie' mode for around 30 seconds or until smooth and well combined.
Use it right away or store it in a sterilised jar with a little bit of rice bran oil or other neutral oil. This will keep in the fridge for a few days or around 1 month in the freezer.
Add the coconut milk and simmer over medium heat for around 5 minutes.
Add the chicken and bamboo shoots and zucchini and simmer gently until just tender before adding the snow peas.
Add the kaffir lime leaves and lime juice to taste. You can adjust the amount of fish sauce or sugar now to suit your liking.
Garnish with the fresh coriander leaves.
Serve with some jasmine rice.
