Start your day with this easy apple and cinnamon bircher-style muesli that's free from gluten, grains, and refined sugar. Instead of traditional oats, this nourishing version is packed with chopped nuts and seeds for a hearty breakfast that's full of flavour and texture. Chia seeds, juicy grated apple, and homemade yogurt bring everything together, creating a satisfying breakfast rich in protein, fibre, and gut-loving probiotics.

An overnight soak allows the chia seeds to absorb the liquid and swell, transforming the mixture into a creamy, porridge-like bircher that is tender and chewy.

We made this recipe with homemade dairy yogurt, but it's just as easy to make vegan by using your favourite homemade plant-based yogurt and milk. Coconut yogurt is especially delicious with the warm flavours of apple and cinnamon.

This recipe is a great way to use up leftover homemade yogurt, thinner batches, or even excess whey. Simply replace some or all of the milk with extra yogurt — apple and cinnamon bircher style muesli is wonderfully forgiving and easy to adapt.
